Roasted Cauliflower Salad

For this warm salad, you need the following ingredients:

1 cauliflower
1 tbsp. garlic powder
1 tsp. salt
1/2 can cannellini beans
1/2 juice of a lemon
1/2 zest of a lemon
1/2 C of green, pitted olives
olive oil

Roast the cauliflower, cut into pieces, in the oven with 2 tbsp. olive oil, garlic powder and salt for 45 minutes at 400 F.

Remove from oven and add beans, lemon juice, zest, and green olives and roast for another 25 minutes.

Serve with fresh parsley with garlic powder and salt to taste.

This is a great recipe for anyone, but it also follows the Blood Type A diet.

Chicken 3 ways

Here are 3 different ways to dress up gluten free, breaded chicken cutlets.

To make the cutlets, you will need the following:

2 1/4 lbs of chicken
1/2 C almond flour
1/2 tsp garlic powder
2 pinches of cayenne powder
1/4 tsp coriander

Pound out chicken breast until flat and separate into 6, 6 oz pieces. Wash chicken but leave it a little wet to help with dredging. Combine dry ingredients into a large bowl and add chicken. You can also add a little bit of ground flax meal into the dry ingredients, if you want to add some additional fiber. Toss chicken to coat with the dry ingredients.

Over high heat, in a large, cast iron pan add 2 tbsp of olive, vegetable or canola oil and sear the chicken breast. Once cooked, deglaze the pan with 1 C marsala wine and reduce heat to medium.   When wine has cooked down, 1-2 minutes, separate chicken into 3 skillets 2 pieces in each.

Mango chicken

Juice of 1/2 orange
Pinch of salt
1/2 C vegetable or chicken broth
1/2 mango- scored and diced on top
2 tbsp mango pepper sauce
1 tbsp of orange zest

Add the above ingredients to the skillet, reduce heat to low and cook covered for 10 minutes.

Spicy Tomatillo Chicken

Pinch of salt
Juice of 1 lime
Zest of 1 lime
1 cup chicken or vegetable broth
3 tbsp tomatillo sauce
5-10 chopped, pickled jalapenos, depending on how hot you want it
2 tbsp chopped, fresh cilantro

Add the above ingredients excluding the cilantro to the skillet, reduce heat to low and cook covered for 10 minutes.

If the chicken looks dry, you can add additional chicken or vegetable broth.

Prior to serving, add cilantro to the chicken.

Chicken with roasted tomatoes and asiago cheese

1 pint of oven roasted tomatoes (16oz of cherry or grape tomatoes, cut in half seasoned with salt, 200 F cook for 1 hour)

Pinch of salt
Pinch of oregano
2 sprigs of rosemary
2 tbsp of asiago cheese

Add the above ingredients excluding the rosemary and cheese, cover and cook over low heat for 10 minutes.

Prior to serving, add rosemary and asiago cheese to chicken.

Turkey Burger

1 1/2 lbs ground turkey
1 large spanish onion, diced and carmelized with 2 T canola oil over low heat for approx. 15 mins when lightly browned and cooked, add 1/4 C sweet vermouth

Add carmelized onion into bowl with turkey meat and combine with the following:

2 tsp garlic powder
1 tsp salt
1/4 C (sweet baby rays) bbq sauce or organic ketcup with low sugar to substitute bbq sauce
1 tbsp sweet or hot pepper relish depending on your preference
1/2 C chopped, fresh spinach
1/4 C liquid egg whites or 2 large egg whites
1/4 C shredded carrots
1/4 C of rice or sesame rice cracker crumbs (about 12 crackers)

Heat 2 tbsp of olive, canola or vegetable oil in a heavy pan over high heat

Form patties to your desired size and cook on each side for about 4-5 minutes. Sear each side on high heat, but then lower heat to cook through.

Serve bunless with mango chili salsa or sweet chili sauce.

Pork Belly Buns

3 pork bellies: approx. 3 inches wide, 2 inches high and 8-10 inches long

Heat 1 tbsp of olive, canola or vegetable oil in a cast iron pan over high heat

In a large bowl combine, make a rub:

2 tbsp sesame oil
2 tbsp kosher salt
2 tbsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp fennel powder

Rub on pork bellies and place fat side down in the pan.

Sear on all sides. Fat will render from the pork bellies. Once all sides are seared, remove pork bellies from pan and drain excess fat.

Put the pork bellies back in the pan and deglaze the pan with 3/4 C of saki.

Add the following to the pan:

6 whole star anise
3 C of chicken broth

Cover pan with aluminum foil and place in the oven at 425 F for one hour.

Pickled cucumbers

1 European cucumber
Apple cider and Rice vinegar- enough to cover the cucumber
1 clove fresh garlic, chopped
1/2 tsp Kosher salt
1 tsp sugar

Leave skin on and slice thin as you can 1/8 -1/16 inch into chips. Place in bowl and cover with vinegar and spices. Refrigerate to marinate for at least 4 hours
