Superbowl Chicken Wings Asian * gluten free*low sodium

Perfect wing recipe for all you gluten frees out there . Plus this is just a healthier way to eat wings cutting out sugar and salt from usual Asian sauces.
Liquid aminos is very similar to soy sauce without all the salt. But it is a very flavorful condiment .
The honey is the sweetener and thickener. The sriracha sauce gives it that extra kick. No one will know these are actually healthy wings .
These wings are as good cold for weekeday leftovers!

3 lbs wings -approx 25
1 Tbl. sesame oil
1 Tbl. garlic powder
¼ tsp kosher salt
¼ tsp cayenne pepper
4 cloves fresh garlic chopped

Rinse wings under cold water . Pat dry with paper towels. Place wings in a non stick baking pan. First add oil then season with other ingredients.
Bake at 400 for 45 minutes.

Meanwhile :

Liquid Aminos
Wing Sauce
¼ c liquid aminos *Bragg
¼ c honey
1 Tbl. organic cider vinegar
2 Tbl. Sriracha ( Asian chili sauce)
1 Tbl. granulated garlic

Next heat all the ingredients of the wing sauce until mixture bubbles gently.
Pour mixture over the wings that have been in oven for 30 minutes.
Cook another 15 minutes with liquid over wings.

All above can be made in morning or day before game or party.

15 minutes before serving cook wings under broiler with oven door slightly open for 2 minutes . Then toss the wings . Let cook another 2 more minutes. Broil wings until dark amber color. Approx 6 minutes total. Wings will brown very fast. (Do not walk away from the oven. Wings will burn quickly.)

Chicken with Oven Roasted Cherry Tomatoes

This chicken dish is a delicious meal that falls off the bone. It is only 2 steps. A guaranteed favorite for a family dinner. Chicken thighs seem to have a much more robust flavor with the oven roasted tomatoes. You can roast the tomatoes the day before and just assemble it when you are ready for your meal. The oven roasted tomatoes bring a sweetness to any dish. Enjoy everyone!

4 -6 chicken thighs
2 lbs. cherry tomatoes (approx 30)
½ cup olive oil
1 Tbsp. sea salt coarse
1 Tbsp. garlic powder
½ cup sake cooking
1 cup vegetable or chicken broth

Place tomatoes in roasting pan @425. Add 1 tsp salt and ¼ c of olive oil. Roast for about 30 minutes.

While tomatoes are roasting:

Place chicken skin side down in hot sauté pan with remainder of olive oil. Season chicken with salt and garlic powder.

Allow chicken to brown until crispy over high heat approx. 7 minutes per side. Lower the heat: Add sake. After 2 minutes, add the broth. Cover and cook over low heat for 20 minutes.

Add roasted tomatoes and cook another 5 minutes.
Serve over rice or pasta. Great with any side dish.

Garnish with Fresh Basil.

Brussel Sprouts Mapled Candy* gluten free

 This Thanksgiving side dish will be everyone’s favorite. Family members who aren’t a fan of vegetables will pick this as one of their favorite dishes. The sweetness of the maple syrup caramelizes the Brussel sprouts leaving them with “a sweet candy taste.”

Brussel Sprouts

Carmelized Onions

 Prepare the Brussel Sprouts

Roasting pan

2 lbs. or 100 med Brussel Sprouts

2 lg. onions diced 1/4 inch

3/4  cup olive oil

1 Tbl.  Maldon sea salt

1 Tbl. of garlic powder

Dash cayenne pepper

¼ tsp. of black pepper

1/2 c sherry or vermouth

3/4 c maple syrup

Large roasting pan

1. Clean Brussel sprouts, cut of hard stem, cut in 1/2 rinse, dry completely.

2. Season Brussel sprouts by adding ? c olive oil, 1/4 tsp. garlic powder. Dash cayenne pepper, 1/8 tsp. black pepper .

3. Roast in oven at 400 for 30 minutes.

Meanwhile as Brussel sprouts are cooking in oven:

Caramelized Onions

Add remainder 1/3 c olive oil in sauté pan adds onion and salt until browned well approx. 30 minutes. Add sweet vermouth after caramelized. Cook 2 more minutes on stove. Pour onions over Brussels sprouts and put back in oven. Cook for 20 minutes longer then add maple syrup. an hour pour 1/2 c  of maple syrup. Let cook 5 more minutes with syrup then ready to serve. Season with salt if needed. .

Day ahead  preparation solution

Roast Brussels sprouts and caramelize the onions day before dinner. Follow recipe above except combing onions and Brussel sprouts until day you are ready to serve.

1 hour before dinner combine onions and Brussel sprouts already prepared. Bake for 20 minutes at 400 degrees then finish off by adding maple syrup.

Chicken Broccoli Parmigiano

Chicken Broccoli Parmigiano

Ingredients:

4 6 oz. Chicken Breast

1/2  cup olive oil

1 tsp. salt

1 tsp. garlic powder

Dash Cayenne pepper

¾  cup white wine

Sauté chicken in olive oil for approximately 5 minutes per side over high heat. Slightly browned.

Add spices after 1st side is cooked.

When chicken browned on both sides: add white wine and cook for 2 minutes longer.

Broccoli and cheese blend

Ingredients:

14 broccoli florets

* Steamed or boiled until soft. Approx.8 minutes. Mix ingredients below while broccoli is still warm in a large bowl.

2 c of shredded mozzarella

1.5 cup Parmesan cheese

1/2 tsp. salt

1 tbsp. garlic powder

1 dash of Cayenne pepper

1 Casserole dish

Mix well with hands until consistency of mashed potatoes.

Assemble:

In a casserole dish, place the cooked chicken over the top, and add the broccoli blend evenly. Cook in a preheated oven for approx. 25 minutes, until top is slightly browned on top.

This is a twist on your regular chicken parmigiano without the red sauce . There is no cream added to make it saucy and runny. The broccoli gave the dish texture. If your child is not a fan of broccoli, it is still a favorite among kids and adults alike.

Recipe Turkey Vegetable Meatloaf **gluten free

Veggie Meatloaf with Condiments

First Sautee Vegetables

Ingredients:

1 med Spanish onion diced fine
3 celery stalks diced fine
1 carrot diced very fine
½ cup oil canola to sauté vegetables

Add oil to a frying pan.

After oil is hot add all vegetables.

After 5 minutes of sautéing vegetables. Add spices:

½ tsp. salt
1 tbsp. garlic powder

Sautee vegetables on medium heat for about 20 minutes until browned. Vegetables can be cooked longer for extra crispiness.

Add ½ cup sherry

Cook 2 minutes to cook of alcohol

Remove from heat.

Cool down in fridge for about 20 minutes or make the night before.

In a large mixing bowl. Mix all the ingredients

4 –lbs. ground organic turkey meat
½ cup almonds grounded in food processor to a breadcrumb texture
½ cup scallions chopped fine
½ cup pumpkin seeds
½ cup shelled hemp seeds
2 tablespoons of ground flax seed
¼ cup organic maple syrup
½ cup organic unsweetened ketchup Westbrae Natural
¼ cup sweet chili sauce ** optional but good* gluten free
Pinch of salt

Add vegetables mixture chilled from refrigerator.

Incorporate all ingredients by hand.

Place meatloaf in a 9 inch round or loaf pan that has been covered with a minimum amount of oil to prevent sticking.

Bake covered in 350 degree oven for 30 minutes. Then uncover for last 20 minutes until top is browned.

Let sit for 1/2 hour before serving.
